Back ribs
2 tbsp butter
2 cups ketchup
1/3 cup worchestshire
2 tbsp cider vinegar
1/4 cup dry white wine
1 tsp dry mustard
2 tbsp brown sugar
1 tbsp dried red pepper flakes
1/4 tsp cummin
1/4 tsp cayenne
1/4 tsp corriander
1 good tbsp. liquid smoke – honey garlic
 
Simmer for 15 min.
 
Bake ribs with onions, lemmon pepper.  Cook in oven 325 for 3-4 hours.
Coat with sauce and bbq.

Mississippi Mud

 1/2 cup butter at room temp
Pinch of salt
1 cup flour
1 cup chopped pecans
Press in 9 x 13 pan and bake for 20min at 350
Layer 1
250 gram pkg cream cheese, room temp
1 cup icing sugar
1 heaping tsp of cool whip
Layer 2
2 pkgs chocolate pudding
3 cups milk
Layer 3
Cool whip
Choc for garnishing
I left out the Pecans for James.  I used 1 1/2 pkg of cream cheese. I used real whip cream.
(whip cream first and add 2 tbsp. of white sugar)

Applesauce Muffins

1/2 cup butter
1 tbsp vanilla
2/3 cup sugar
2 eggs
Cream these ingredients together and then add the dry ingredients.  I think I add more
cloves as I like them.
1 1/3 cup flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp soda
1/2 tsp cinnamon, 1/4 tsp nutmeg & cloves
3/4 cup applesauce
Bake at 375 for 25 minutes.  Makes 12 muffins.

Diane’s black bean dip

          

BEAN DIP
1 CAN BLACK BEANS RINSED
1 CAN CORN DRAINED
1/2 RED ONION CHOPPED
1 RED PEPPER CHOPPED

MIX IN LARGE BOWL.

ADD: 1/4 CUP VEGETABLE OIL
          JUICE FROM 2-3 LIMES
          1 TSP. CUMIN
          1/2 BUNCH CHOPPED CILANTRO
          SALT AND PEPPER
MIX TOGETHER AND SERVE WITH SCOOPER CHIPS.

Mac and Cheese

                     

  • 1 tablespoon vegetable oil or extra virgin olive oil
  • 2 tablespoons butter (I have just used olive oil before)
  • 3 tablespoons flour
  • 1 1/2 cups whole or 2 percent milk
  • 3 cups white cheddar cheese, shredded ( I use a mix of cheeses, depending what I have on hand)
  • red pepper pesto
 
  • 1/4 teaspoon ground cayenne pepper,
  • Salt
  • 1 pound elbow macaroni, cooked;  I use Detalini, the short tubes, either one works
  • one small onion, chopped (optional) I cook the onion with the pasta
  • breadcrumbs
  • I have used Rosemary or oregano in my sauce
 
Heat a medium, deep skillet over medium heat. Add oil and butter.  When the butter melts into the oil, add flour and combine. Gently cook, whisking flour and butter together, until smooth and flour has had a chance to cook, about three minutes.

Slowly add milk while continuing to whisk. Gently heat the milk while stirring. Allow the milk to thicken a bit, then stir in two cups of shredded cheddar cheese a handful at a time.  Season sauce with salt and pepper  

 Transfer to a baking dish. I put 1/2 the mac, 1/2 the sauce, a layer of the red pepper pesto, the rest of the mac, the rest of the sauce and top with bread crumbs. Bake for 20 minutes at 350. Can brown the top, 5 or 10 minutes on broil.
